Black Currant Popsicles (Printable)

Tangy, refreshing black currant frozen treats made with simple ingredients. Perfect cooling summer dessert.

# What You'll Need:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup whole blackcurrants, fresh or frozen

# Directions:

01 - Combine blackcurrant juice and sugar in a small saucepan. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3 to 5 minutes. Do not allow mixture to boil.
02 - Remove from heat and stir in fresh lemon juice. Allow mixture to cool to room temperature before proceeding.
03 - If using whole blackcurrants, divide evenly among popsicle molds.
04 - Pour cooled blackcurrant mixture into molds, leaving approximately 1/4 inch space at the top to accommodate expansion during freezing.
05 - Insert popsicle sticks into each mold and place in freezer for minimum 4 hours until completely frozen and set.
06 - Run warm water briefly over the exterior of molds to loosen popsicles. Gently withdraw popsicles from molds.

# Expert Tips:

01 -
  • They taste like summer itself—bold, tart, unapologetically real without artificial flavoring masking the fruit.
  • Ten minutes of hands-on time means you're actually doing something useful instead of waiting around for store-bought ones to disappear from the freezer.
02 -
  • Never pour hot or even warm liquid into molds if your sticks are already in place—they'll melt or shift, and you'll end up with wonky popsicles standing at strange angles in the freezer.
  • Unsweetened juice is absolutely essential; I once grabbed what I thought was plain juice and it turned out pre-sweetened, and the result was cloyingly sweet and vaguely medicinal.
03 -
  • If your blackcurrant juice is bottled and from the store, always check the label—some brands sneak in sugar or weird additives that will throw off your flavor balance.
  • Run warm water around molds for just a few seconds, not longer, or the whole thing starts leaking and you're fishing popsicles off your counter like you're playing some frustrating kitchen game.
