# Directions:
01 - Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper to facilitate cleanup.
02 - In a large mixing bowl, combine sweet potatoes, Brussels sprouts, and red onion with olive oil, smoked paprika, dried thyme, garlic powder, salt, and black pepper. Toss thoroughly to ensure even coating.
03 - Spread the vegetable mixture in a single layer across the prepared baking sheet. Distribute sausage pieces evenly among the vegetables.
04 - Roast for 25 to 30 minutes, stirring once halfway through, until vegetables are tender and caramelized and sausages reach an internal temperature of 165°F.
05 - Remove from oven and garnish with chopped fresh parsley if desired. Serve immediately.
