Instructions
- Preheat oven:
- Preheat oven to 220°C (425°F). Line a large rimmed baking sheet with parchment paper for easy cleanup.
- Toss vegetables and seasoning:

- Spread on baking sheet:
- Spread the vegetables in a single layer on the prepared baking sheet. Nestle the sausage pieces among the vegetables.
- Roast:
- Roast for 25–30 minutes, stirring halfway through, until the vegetables are tender and caramelized and the sausages are cooked through (internal temp 74°C/165°F).
- Garnish and serve:
- Remove from oven. Garnish with fresh parsley before serving, if desired.
